Chicken Fried Rice

2 cups long grain rice

3 cups diced chicken

3 ½ cups water

1 package onion soup mix

1 onion, diced

1 can mushrooms

1 cup celery, diced

½ cup oil

½ cup soy sauce

Mix together, put in casserole dish. Bake covered at 350 degrees for 1 ½ hours. Freezes well.
